Bunmeido Souhonten was founded in 1900 by Nakagawa Yasugoro.
Ever since our founding, our goal has been to make sweets that will delight everyone.
Without being satisfied with the status quo, we research and improve our ingredients and manufacturing methods, and work hard every day.
Here, we introduce the carefully selected ingredients used in our castella.

Nanban eggs: Eggs especially for castella

Nanban eggs: Eggs especially for castella

The taste, aroma, and golden color and luster of castella are determined by the eggs.
At Bunmeido Souhonten, we use Nanban eggs developed especially for castella in collaboration with a contract farm.
Castella has its roots in “Nanban” (an old Japanese word referring to Western countries), and these eggs were named “Nanban tamago” (Nanban eggs).
*Nanban eggs are not used in Chocolate Castella and Matcha Castella.

Domestic wheat flour

We use wheat flour that is finer than regular flour and forms less gluten.
The fine air bubbles created by whipping the batter result in moist castella cakes.
Leaving it to mature after milling produces expansion and elasticity of the dough.
Bunmeido Souhonten castella is made from 100% high-quality domestic wheat flour.

Zarame (granulated) sugar

Zarame (granulated) sugar

The characteristic feature of Nagasaki castella is the Zarame (granulated) sugar that remains on the bottom.
The Zarame sugar texture adds an accent to the refined sweetness of the castella.

Glutinous rice syrup

We use glutinous rice syrup made using traditional methods.
The texture becomes moist, and the amino acids contained in glutinous rice give our castella an exquisite flavor.
