We use Nanban eggs specially for castella, which were developed in collaboration with a contract farm.Nanban eggs are high-quality eggs made specifically for castella.Castella has its roots in the Nanban region, so they were named “Nanban eggs.”*We do not use Nanban eggs in our chocolate castella and matcha castella.

We use wheat flour that is finer in grain and less prone to gluten formation than regular wheat flour. The fine bubbles created by whipping the flour create a moist castella cake.
